What is sharpness?
Sharpness is defined by the quality of the intersection of the two bevels which meet at the cutting edge. They define the cutting angle. Their intersection line forms the cutting edge.
A dull blade develops a third surface on the intersection line, which can sometimes be seen as a light reflection. So, the purpose of sharpening is to precisely remove material from the bevelled surfaces to achieve a perfect intersection line.
